Recipe from Chef Lola’s Peri Peri Chicken
Don’t laugh o! So a couple of years ago while at uni, there was this guy who really wanted to date me but I just wanted to be friends. Anyways so he called me saying he was out and wanted to know what he could get for me. I honestly thought Peri Peri Chicken was just a fictitious meal my Dad used to say (Chicken Peri Peri)🙈🙈. So I said Chicken Peri Peri to get him off my back and set him on a wild goose chase. Fast forward a couple of hours after and there he was with Nandos Peri Peri Chicken. I laughed my head off, and had to fess up so as not to lead him on and well laugh at my ignorance!
Ingredients (my modifications)
- I used 1 scotch bonnet in place of 4 Birds Eye Chillies (more or less to your taste)
- Skipped the lemon ‘cos I didn’t have any
Step 4. After the first 30 minutes, I switched the oven knob to “Broil” aand then put the chicken for the remaining 30 minutes. The broil option ensures it comes out looking and tasting succulent rather than dry. Learnt this from 9jafoodie.
The chicken turned out tender, juicy and I could taste the seasoning in every bite! Hubby started monitoring the chicken in the fridge o, counting to ensure he ate them all up on top my work o! 🙄
With this recipe it’s safe to say I can contest in the next Rib fest this summer and cart home lots of awards!!!
