Red Velvet Cupcakes (with my twist!)

Recipe from Sally’s Baking Addiction

In the spirit of Valentine’s Day I thought to bake! And what other cake but red velvet! When I lived in Lagos, my absolute favourite was from Cakes & Cream and they were right behind my office! Chai them chop my money o!!
So I found this recipe online, hoping it would turn out well.

While waiting for the verdict and cleaning up I kept thinking how interesting life is. You know, I was never one to be interested in cooking let alone baking! And I realised that we are most times only limited by ourselves, we can do ALL things through Christ who strengthens us. So just give a try and you never know!

Ingredients
In Chimamanda Adichie’s voice “We should all not be so conventional!”, hehe. I mixed blue and red colouring to make it purple.

Steps
25 minutes was not sufficient, had to add an extra 10 minutes.
And they yielded a total of 18 cupcakes for me.

Verdict
Hmm, the cupcakes turned out very fluffy and delicious!!! I can confidently invite you over and offer you some.
They were not as purple as I expected, my fault though didn’t add enough colouring.

Will add the cheese cream frosting and upload in another post, chasing an infant and baking apparently isn’t the easiest task.
